This classic sweet potato casserole is the perfect combination of sweet potato filling and crunchy buttery, pecan topping
SERVES: 4

COOK TIME: Minutes
Ingredients

4 large sweet potatoes
1/2 cup canned coconut milk
1 cup pecans
1 tablespoon coconut oil
1-2 tablespoons maple syrup
1 teaspoon cinnamon
1/2 teaspoon nutmeg
juice of 1/2 orange
1 teaspoon melted coconut oil

Directions
Step 1  Step 1:
Bring large pot of water to boil. Heat oven to 350 degrees. Peel and dice sweet potatoes.
 
Step 2  Step 2:
Add sweet potatoes to water. Boil 10 minutes, or until tender.
 
Step 3  Step 3:
Drain potatoes. Place back in large pot with remaining ingredients. Using hand mixer, blend until potatoes reach desired consistency.
 
Step 4  Step 4:
in small bowl, combine all topping ingredients until pecans are well coated.
 
Step 5  Step 5:
Place sweet potato mixture into an oven safe dish and top with pecans.
 
Step 6  Step 6:
Bake 15 minutes, or until topping is browned.
